Maple Syrup Mead

5 gallons
2 quarts Vermont Maple Syrup
5# clover honey
1 teaspoon yeast nutrient
2 teaspoon acid blend
Red Star Cote de blanc yeast

Add syrup and honey to 5 gallons water, bring to
180 degrees, add acid & nutrient. Hold for 10 minutes.
Force chill and add to fermentor. Add yeast.
Primary fermentation 1 month
Secondary 1 month
Age in carboy 2-6 month. Longer if you wish.
