  10 lbs. Klages Malt
  2 lbs. 10 l. Crystal Malt
  1 lbs. 40 l. Crystal Malt
  2 oz. Perle Hops (bittering)
  3 0z. Northern Brewer Hops (bittering)
  2 tsp. Irish Moss
  1 oz. Perle Hops (aroma)
  1 oz. Northern Brewer Hops (aroma)
  1 pkg. Wyeast # 2112-Steam Beer

  O.G. 1.051

  Heat about 3 gallons of water to 150 and add all the grains. The first rest should be 138 for 30 minutes. Heat to 153 and rest for 60 minutes or until conversion is completed. Heat to 168 for 10 minutes, then sparge with 170 water-of course this is a 10 gallon batch! Bring the wort to boil. Boil for 30 minutes and add the bittering hops. Boil for 30 minutes more and add the Irish moss. Boil for 25 minutes and add the aroma hops. Boil for 5 more minutes. Remove from heat and cool to 70-80 and pitch your yeast starter.
